Extending my menu options…..

I’ve been trying to explore a few new recipes and extend myself, tonight’s dinner all plated up…….Orange chicken on a bed of spinach and orange salad with a side serve of rice drizzled over lightly with an orange juice, garlic and chicken stock sauce that was reduced using the pan the chicken was cooked in. A very healthy and filling meal and a two thumbs up from my hubby  on taste and presentation, I can see this one being made up again in the near future Smile

I also made up a batch of blueberry muffins on the weekend for the freezer to have as a snack for work, makes it so much easier to freeze them as then I’m not tempted to eat the whole lot if they’re sitting on the kitchen bench tempting me lol…..what new recipes are you trying out and do you have any you could recommend I try out???

Yum, both look very inviting indeed. I am going to try Raspberry swirl cheesecake for when the girls come over on Friday.

wow Barb i agree with your hubby 2 thumbs up,restaurant quality,well done and those muffins look so yummy ,lol,yes i have to do the same and freeze them or else they go very quickly,lol,not cooking anything exciting here at the moment,i look forward to seeing what else you make,enjoy your evening my friend xx

The chicken looks and sounds yummy. I always freeze my muffins, stops me from eating them and very convenient for school lunches.

Wow they both look amazing Barb. I need to do that but by the time I get home from work sometimes it is easier to do something that is quick and you know

Hi Barb. You can pop over to my blog if you like - I always post my week's menus with links to the recipes as well. I try to find things that are quite quick and easy to cook, but which are very tasty too.
Your blueberry muffins look good. I don't often cook cakes and things - because we eat them!!!

That chicken dish sounds wonderful. Mind you it does help that I am hungry, and sitting here reading blogs and commenting instead of cooking that dinner!
